Chef and author Tracey Lister, who has lived in Hanoi for over a decade running the Hanoi Cooking Centre, will cover a range of delicious seafood dishes from this fascinating country, including spring rolls with mackerel braised in soy and pickled vegetables, prawn and sweet potato cakes with classic dipping sauce, squid and pomelo salad and marinated fish in banana leaf.
