In this class Tracey will share her passion for the flavours of Spain. Traditional Spanish cuisine is a hearty fare based around garlic, olive oil and by virtue of being the Iberian Peninsula seafood. Most regions will have their own variation of a fish stew and in this class you will prepare the Catalan version, Zarzuela de Marisco, which features almonds, garlic and herbs. In addition, Tracey will demonstrate three tapas to start with: Mojo Picon, garlic chilli sauce, Cured Sardines and Lamb Empanadillas. To finish, a dessert from Northern Spain, Leche Fritta, fried custard.
